Porcini Carpaccio

Porcini mushrooms are truly a gift of nature, and a blessing for anybody with a passion for food. Leonardo Da Vinci is quoted saying that “Simplicity is the ultimate sophistication”; nothing could be more true about this wonderful ingredient.

The following recipe for the carpaccio is extremely quick and easy, and in its incredible simplicity will deliver the pure flavor of the Earth to your palate.


Prep Time: 5 mins/ Serves: 4

4 porcini mushrooms
Parmesan, shaved
Extra virgin olive oil
Lemon juice
Salt and freshly ground black pepper

Using a small pairing knife remove the dirt from the base of the mushrooms, use a pastry brush or a soft toothbrush to clean the remaining surface. Absolutely never wash Porcini!


Slice the mushrooms very thin with a mandolin and lay them on a serving platter.


Season with salt, lemon juice, olive oil, salt and pepper. Top with a light coating shaved Parmesan.
