Roasted Peaches with Amaretti Filling

In Summer we always had fresh peaches in our garden. The surplus of peaches combined with my father’s strict Kosher diet meant any creamy desserts were replaced with my mom roasting peach halves over the grill. My brother and I would go pick big ripe ones from the tree and after they were roasted and caramelized from their natural sugars my mom would mix amaretti cookie, cocoa powder and water together and use the mixture to form a pit in the middle of the peach halves. It was delicious. My and I loved it and my mother didn’t mind making it for us because it was a great way for us to eat our fruit.

6 ripe peaches, sliced in half and pitted
3/4 cup amerritti cookie crumbles
¼ cup Amaretto liqueur
1 tablespoon cocoa powder

Heat grill to medium high heat.


Place peaches cut side down and grill for 3 minutes, until golden and a bit charred. Turn over and cook for another 3 minutes, this should soften everything up. Remove from grill to cool.


Add cookie crumbles to a medium bowl. Stir in cocoa powder, amaretto, and toss well. Mold the cookie crumbles into round balls and place in the center of the grilled peach where the pit would be. Serve while still warm.
