Episode #307 - Bruschetta with Sausage, Brie Cheese and Fresh Herbs.
In Italy, by definition, a bruschetta is a flame toasted thick slice of bread dressed with any kind of sauce, topped with Extra Virgin Olive Oil, some Salt and some Pepper.
The most common
bruschetta is usually (and here another token!), the
one with an uncooked tomato sauce. Toast the bread,
rub well a clove of garlic on one side of each slice,
and dress with finely chopped tomatoes that you
marinated for a couple of hours in Extra Virgin Olive
Oil, finely chopped garlic, salt and pepper.
BRUSCHETTA WITH SAUSAGE,
BREE CHEESE AND FRESH HERBS

Cooking Time: 15 min. for the sausage sauce + 5 min.

Ingredients
6 slices of bread
2 pork sausages (mild or hot according to taste)
¼ Lb of Brie Cheese (or other semi-soft cheese)
¼ Red Onion
1 Handful of Rosemary
1 Handful of Sage
½ Glass of White Wine
Olive Oil, Salt and Pepper
How to:

Chop the Onion fine and rinse the Herbs thoroughly.
Chop the Sage fine.
Slice the bread.
Pop the wine open and start sipping!
Open the Sausages and sauté the meat with the Onion in a tablespoon of olive oil for about 5 minutes in a medium sized non stick pan, until the meat starts browning.
Add the half glass of wine, the Rosemary and the Sage.
Cook for about 5-7 minutes, until the wine has been completely absorbed, take off the fire and set aside.
Toast your bread on a fire grill, in a toaster or on the barbeque; do not use a sandwich press, otherwise you will make crackers.
Turn the oven on to
Broil.
Cut the slices of bread in halves and lay them on a
cookie sheet, spread the Brie Cheese (cut the crust
out) on the bread and top it with a tablespoon of
your sausage concoction. Do not use a cheese that is
too soft or wet, like Bufala Mozzarella, it
will make your bread soggy, it will melt into the
sheet, it will burn, and eventually smoke out the
whole oven!
Put the Bruschetta in the oven and broil for about 5
minutes (do not get distracted, it literally takes a
second to screw it up and burn everything).
When the cheese has melted, and the sausage starts
looking crisp, take the tray out of the oven; serve
the Bruschetta dressed with a sip of Extra Virgin
Olive Oil, a sprinkle of Salt and freshly ground
Pepper.
